I do have an Android tablet mostly sitting and a Linux laptop (running KDE) can I do it in a really seemless way?
Only through apps that work as RDP/remote desktop. You can't use native X/wayland screens with Android unless you root it.

Racket can supposedly compile standalone packages with the raco compile command (IIRC). Does anyone have experience with this?
They aren't standalone executables, they need to be distributed along with the lib folder that includes the racket runtime.
Hiring an engineer based on a tool they use is a great way to end up hiring no one.
It's more of an indicator of their (mis)understanding of basic fundamentals.
