You can still set up Windows 11 home without a Microsoft account, I just did it today on a new PC setup.
You get connected at first, get the updates, then when the computer wants you to put in your account info you unplug Ethernet, or put the computer in Airplane mode. I put it in airplane mode, hit the back button and got to where you put in a local account. Better do it soon before Microsoft closes the loophole.

In general the changes are to push you toward Microsoft products and online services yet more, and do little for productivity itself. That anti-trust slaps of the past didn't appear to be painful enough for MS to remember them. The burn of the monopoly stove didn't sufficiently train the toddler, and now they are grabbing the stove again.
Robust hardware requirements, including TPM and secure boot definitely cause some short-term pain, but it's probably the right decision. Force hardware vendors to add these options, even if it costs more. Eliminate the cost advantage of leaving these out (even if it's minimal).
